Banana Bread 4


3 lg. or 4 sm. bananas
1 egg
1/2 c. shortening
2 c. flour
3/4 c. sugar (or 1 c. sugar)
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla


Mash bananas, add sugar, shortening and egg. Cream well. Sift flour, baking powder and baking soda together. Add gradually to fruit mixture. Mix thoroughly, pour into greased and floured bread pan. If desired, add 1/2 cup broken nuts. Bake 3/4 to 1 hour until an inserted knife blade comes out clean.
