Banana Bread 49
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 to 1 1/4 c. very ripe bananas,
mashed
1/4 c. buttermilk
4 lg. egg whites
1/2 c. sugar
1 tsp. baking soda
1/2 c. wheat germ
1/4 c. vegetable oil
Heat oven to 350 degrees. Put flour, sugar, baking powder, baking soda and salt into a large bowl. Stir to thoroughly mix. Stir in wheat germ. Add remaining ingredients and beat until well blended. Scrape batter into an oiled loaf pan. Bake 1 hour or until nicely browned and cracked on top and a cake tester comes out clean. Remove from oven and let cool in pan. Makes 1 loaf. This was one of Grandmom's favorites!!!
