Banana Bread With Walnuts
3/4 c. walnuts, finely chopped
1 1/2 tsp. vanilla
1 tsp. orange rind
1/2 c. skim milk
1/4 tsp. salt (optional)
1/2 tsp. baking powder
1/2 tsp. baking soda
2 c. flour
1 egg (or egg beaters) beaten
2-3 med. sized bananas
3/4 c. sugar
1/4 c. margarine
Preheat oven to 350 degrees. Cream margarine, gradually adding sugar; beat well. Add egg and bananas, vanilla and orange rind; mixing well. Combine 1 3/4 cups flour, salt, baking powder and soda; sift. Add to creamed mixture alternately with milk. Use remaining flour to dust the walnuts. Stir in batter. Pour in greased and floured loaf pan. Bake 1 hour. Cool 8-10 minutes and remove. Combine 1 cup 10X sugar and 1 1/2 tablespoons water. Stir well. Coat top of bread with this and decorate with maraschino cherries.
