Banana Nut Bread 14
1/2 c. shortening
1 c. sugar
2 eggs
3 crushed ripe bananas
2 c. flour
1 tsp. soda
1/2 c. nuts, chopped
Crush bananas and whip until light. Cream shortening and sugar. Add eggs, then flour, soda and nuts. Add crushed bananas. Pour into a well greased loaf pan. Bake in preheated oven, 350 degrees, for 1 hour. Use 1 stick margarine for shortening and always use good and ripe bananas. This freezes well.
