Banana Nut Bread 159
1/3 c. shortening
1/2 c. sugar
2 eggs
1 3/4 c. flour (sifted)
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. ripe bananas (mashed)
Nuts
Cream shortening and sugar; add eggs and beat well. Sift dry ingredients. Add to creamed mixture. Alternate with bananas and blend well. Stir in nuts. Pour into well-greased 9x5x3-inch loaf pan. Bake at 350 degrees for 45-50 minutes. Remove from pan and cool on rack.
