Banana Nut Bread 169
2 sticks oleo
4 eggs
3 c. sugar
3 c. flour
1 c. buttermilk
1 tsp. vanilla
1/4 tsp. salt
1 tsp. baking soda
2 c. mashed ripe bananas
1 c. chopped nuts
Let oleo soften in a large bowl. Pour sugar over oleo. Cream sugar and oleo until smooth. Add eggs one at a time. Put a little buttermilk in another bowl and dissolve soda in it. Slowly add that mixture along with a little flour to creamed sugar mixture. Add remainder of buttermilk and flour alternately. Add salt. Then add nuts. Fold in bananas. Add vanilla. Pour in lightly greased angel food cake pan. Bake for 1 hour at 375 degrees (test with toothpick for doneness).
