Banana Nut Bread 199
1/2 c. butter or margarine, softened
1 c. sugar
2 eggs
1 1/2 c. pureed bananas (4 med.
bananas)
2 c. all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 c. chopped pecans
Cream the butter by whipping it at room temperature. Gradually add sugar, eggs (one at a time), beating well. Add pureed bananas and mix until smooth. Combine and sift together flour, baking soda and salt. Add to creamed mixture, stirring just until dry ingredients are moistened. Stir in pecans. Pour batter into two greased 7 1/2 x 3 x 2 inch loaf pans. Preheat oven at 375 degrees. Bake for 15 minutes. Reduce heat to 350 degrees and bake an additional 40 minutes or until a wooden toothpick inserted in the center comes out clean. Cool in pan 10 minutes. Remove from pan and cool completely. Enjoy. Recipe yields 2 loaves.
