Banana Nut Bread 219
1 c. sugar
1 c. mashed bananas
1/2 c. melted butter
1/4 c. milk
1 tsp. vanilla
2 eggs
2 c. all-purpose flour
1 tsp. soda
1/2 tsp. salt
1/2 c. chopped pecans
Preheat oven to 350 degrees. Grease bottom only of a 9x5 inch or 8x4 inch loaf pan. In large bowl, blend sugar, bananas, butter, milk, vanilla and eggs. Beat 1 minute at medium speed. Sift flour, soda and salt into the batter. Add pecans and stir just until dry ingredients are moistened. Bake 50-60 minutes or until toothpick inserted comes out clean. Cool 15 minutes in pan. Remove and finish cooling.
