Banana Nut Bread 29


1/2 c. margarine, softened
1 c. sugar (brown or white)
2 lg. eggs
2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 c. mashed bananas
1/2 c. chopped nuts


Cream the margarine and sugar. Add the eggs and beat well. Combine the dry ingredients and stir into creamed mixture alternately with the mashed bananas. Fold in the nuts last. Pour into a greased loaf pan, bake in 350 degree oven for about 1 hour. Banana Bran Nut Bread: A simple variation uses 1 1/2 c.flour and 1 c. bran flakes. Add 1 teaspoon vanilla extract and 2 teaspoons of baking powder. Banana Peanut Bread: Use only 1 cup mashed bananas and add 3/4 cups crunchy peanut butter.
