Banana Nut Bread 4


1/2 c. shortening (margarine or Crisco)
2 eggs
2 c. flour
1/3 c. chopped walnuts or pecans
(optional)
1 c. sugar
4 very ripe bananas
1 tsp. baking soda


Mash bananas, shortening and sugar together until creamy. Add eggs, beating well. Sift dry ingredients and add to the mixture. Add nuts and stir well. Grease and flour two 8x4x2 inch loaf pans. Then pour in mixture. Bake in preheated 325 degree oven for about 50 minutes or until "bread" tests done.
