Banana Nut Bread 9
2 c. sugar
2 eggs
7 or 8 tsp. margarine, melted (I use
1 stick)
2 tsp. baking soda
1 tsp. salt
4 lg. or 6 med. ripe bananas, mashed
3 1/2 c. plain flour
2 tsp. vanilla flavoring
1/2 to 3/4 c. chopped walnuts
Cream together sugar and eggs. Put all dry ingredients into a sifter and sift into egg and sugar mixture. Add melted margarine, bananas, flavoring, and nuts. Pour into large loaf pan or 2 small loaf pans. Bake at 250 degrees for 1 1/2 hours or until inserted toothpick comes out clean.
