Easy Banana Nut Bread


2 1/2 c. unsifted flour
1 c. sugar
3 1/2 tsp. baking powder
1 tsp. salt
3 tbsp. oil
1 egg
3/4 c. milk
1 c. smashed ripe bananas
1/2 c. chopped nuts


Preheat oven to 325 degrees. Mix all dry ingredients with wire whisk. Add egg, oil and milk; mix with spoon. Add bananas and nuts. Pour into greased bread pan. Bake for 55 to 60 minutes. Bread is done when knife comes out clean. Cool on rack 2 to 3 minutes, remove from pan, cool another 15 minutes. Serve. Also makes 6 to 8 muffins.
