Miles Banana Bread


3 eggs
1 c. vegetable oil
1 1/2 c. sugar
2 c. mashed, over-ripe bananas (can
substitute grated zucchini or
mixture of zucchini & carrots)
1 tsp. cinnamon
3 tsp. baking powder
3 c. all-purpose flour
1 c. chopped walnuts
1/2 tsp. salt


1. Beat eggs until foamy. 2. Gradually beat in oil and sugar. 3. Add banana, cinnamon, salt and baking powder and mix well. 4. Blend in flour. 5. Fold in walnuts. 6. Pour mixture into 2 greased 7 1/2 x 3 1/2 inch loaf pans. 7. Bake at 350 degrees for 1 hour.
