Oatmeal-banana Nut Bread


1/2 c. shortening
1 c. sugar
2 eggs
1 c. mashed banana
1 1/2 c. sifted flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. quick oatmeal
1/2 c. chopped walnuts
1 tsp. vanilla


Preheat oven to 350 degrees. Grease and flour one 9 x 5 inch loaf pan. Cream shortening and sugar; add eggs and banana, mixing well. Sift flour, baking soda, and salt; add with oatmeal, walnuts, and vanilla to creamed mixture; mix well. Pour into pan. Bake 50 minutes or until inserted toothpick comes out clean.
