Velvet Banana Bread
5 lg. ripe bananas
4 eggs, well beaten
1 c. shortening
2 c. sugar
4 c. sifted all-purpose flour
2 tsp. soda
1 tsp. salt
1 c. walnuts, chopped
Beat bananas until liquid. Combine with eggs and set aside. Cream together shortening and sugar until fluffy. Add banana mixture and blend. Add sifted dry ingredients and stir until smooth. Fold in nuts. Pour into 2 well greased loaf pans. Bake at 350 degrees for 45 to 50 minutes or until done. Makes 2 loaves.
