Banana Cake-bread
1 stick margarine
2 eggs
2 c. all purpose flour, sifted
2 tsp. baking powder
1 tsp. lemon juice
1/4 c. coconut
1 c. sugar
3 bananas, well ripened, mashed
1 tsp. soda
1/2 tsp. salt
1/4 c. chopped pecans or walnuts
Cream melted margarine and sugar; add eggs and bananas. Stir in nuts and dry ingredients. Place in a well greased and floured loaf pan. Bake 1 hour at 375 degrees. Sprinkle with powdered sugar if desired. This cake bread freezes well.
