Banana Bread French Toast


Banana Bread: 1 tsp. baking soda 1/2 tsp. salt 1/2 c. butter, room temperature 1 c. sugar 2 eggs 1 c. mashed bananas 1 tsp. fresh lemon juice 1/3 c. milk 1/2 c. pecans For bread, preheat oven to 350 degrees. Generously butter 9 x 5 x 3 inch loaf pan. Sift first 3 ingredients into small bowl. Using electric mixer, cream butter in large bowl until light. Gradually beat in sugar. Beat in eggs one at a time. Add mashed banana and lemon juice and beat until blended. Mix in dry ingredients alternately with milk, beginning and ending with dry ingredients. Mix in pecans. Pour batter into prepared pans. Bake until tester inserted in center comes out clean, about 1 hour and 20 minutes. Cool in pan on rack and cool. Can be prepared 2 days ahead, wrapped tightly and refrigerated. Cut bread into 3/4 inch thick slices.FRENCH TOAST:


4 lg. eggs
1/4 c. whipping cream
2 tbsp. brown sugar
1 tsp. vanilla
1/4 tsp. ground nutmeg
1/4 tsp. ground cinnamon
