Banana Fruit Bread


1/2 c. soft margarine
1 c. sugar
1 1/2 c. ripe mashed bananas
2 c. flour
1/2 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. lemon peel
2 eggs
1 tbsp. lemon or lime juice
1 1/2 tsp. baking powder
1/2 tsp. salt (opt.)
1/4 tsp. nutmeg
1/2 c. chopped nuts
1/2 c. chopped candied fruits (fruit
cake mix)


Cream margarine and sugar in large bowl. Add eggs, one at a time, beating well after each addition. Add dry ingredients alternately with lemon juice, gradually, beating well after each addition. Add lemon peel, fruit and nuts. Pour into greased and floured 9"x5"x3" loaf pan. Bake in 350 degree oven for 60 minutes or until toothpick comes out clean. When bread is cool, wrap and freeze. For party sandwiches, slice thinly and spread with cream cheese.
