Banana Bread 3
2/3 c. sugar
1/4 c. reduced calorie margarine
1 egg, (I use all egg beaters)
2 egg whites
2 to 4 sm. or med. bananas
1/4 c. water
1 3/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
Heat oven to 350 degrees. Spray bread pan or 1 lb. coffee can with pam or equivalent. Beat sugar and margarine until fluffy. Add egg, egg whites, bananas and water. Blend on low then add remaining ingredients and mix until moistened. Pour in pan and bake until tester inserted in the middle comes out clean. Bake for 45 to 60 minutes. Cool and slice.
