Banana Date - Nut Bread
Yield: 2 loaves (16 slices per loaf). Exchanges per 2 slice serving: 1 1/2 bread and 1 1/2 fat. 1 c. unprocessed bran flakes 1/4 c. wheat germ (about 1 oz.) 2 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1/2 c. margarine (1 stick) 2 eggs 1 tsp. vanilla 2 tsp. brown sugar substitute 1 1/2 c. mashed bananas (about 12 oz.) 1/2 c. chopped walnuts or pecans (about 2 oz.) 1/2 c. chopped dates (about 3 oz.) In a medium mixing bowl, place whole wheat flour, bran flakes, and wheat germ. Sift baking powder, soda, and salt over flour and mix all together. Set aside. In a large mixing bowl, cream together margarine and brown sugar substitute. Add eggs and vanilla; mix thoroughly. Alternately add mashed banana and sifted dry ingredients to the sugar and egg mixture, mixing well after each addition. Stir in chopped dates and nuts. Pour into two 9 x 5 inch loaf pans, coated with vegetable pan spray. Bake 45 to 60 minutes at 350 degrees or until done. Remove from pan. Cool on rack.
