Low Fat Banana Bread 2


1 3/4 c. all-purpose flour
2/3 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c. mashed ripe bananas (2-3 med.
bananas)
1 jar (4 oz.) baby food prunes
(replaces 1/3 c. shortening,
butter or margarine)
2 tbsp. skim milk
2 eggs
1/4 c. chopped nuts (optional)


In a large mixer bowl combine 1 cup of the flour, the sugar, baking powder, baking soda and salt. Add mashed bananas, baby food prunes and milk. Beat with an electric mixer on low speed until blended, then on high speed for 2 minutes. Add eggs and remaining flour, beat until blended. Stir in nuts. Pour batter into a greased 8 x 4 x 2 inch loaf pan. Bake at 350 degrees for 55-60 minutes or until toothpick inserted near center comes out clean. Cool for 10 minutes; remove from pan. Cool thoroughly. Wrap and store overnight before slicing. Makes 1 loaf (16 servings).
