No Fat Banana Bread
3/4 c. sugar
2 eggs
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. baking soda and salt
1/2 c. applesauce
1 c. mashed bananas
In a bowl, combine salt, flour, baking powder and soda. In another bowl, combine sugar, applesauce and eggs. Beat vigorously until frothy. Add mashed bananas and blend thoroughly. Fold into flour mixture until blended. Pour into Pam sprayed bread pan. Bake at 325 degrees for 1 hour, until crust is brown. Use toothpick to test. Remove from oven and pan and let it stand 10 minutes.
