Whole Wheat Banana Bread
1 1/4 c. all purpose flour
1/2 c. whole wheat flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. sugar
1/4 c. vegetable oil
1 egg
1 c. mashed ripe bananas (about 2 medium)
1 tsp. vanilla extract
Vegetable cooking spray
Combine first 4 ingredients in a small bowl; stir well and set aside. Combine sugar and oil in a medium bowl; beat at medium speed of an electric mixer 2 minutes or until well blended. Add egg; beat until light and lemon colored. With mixer running at low speed, add flour mixture alternately with bananas, beginning and ending with flour mixture. Blend well after each addition. Stir in vanilla. Pour batter into an 8 x 4 x 2 inch loaf pan coated with cooking spray; bake at 350 degrees for 45 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in pan on a wire rack; remove from pan and let cool completely on a wire rack.
