Old Fashioned Banana Bread
1/2 c. shortening or butter
1 c. sugar
2 eggs
3 ripe bananas, mashed (1 c.)
1 tsp. baking soda
2 c. flour
Cream shortening, sugar, eggs (one at a time) and bananas. Add dry ingredients, mix well. Place in greased and floured 9 x 5 x 3 inch loaf pan. Push batter into corner of pan, leave center slightly hollowed. Bake at 350 degrees for 50 to 60 minutes or until done. Cool on wire rack. Stays fresh for days. Michele adds 1/2 teaspoon baking soda, 1 teaspoon baking powder and 1 teaspoon salt with her dry ingredients. Plus she folds in 1/2 cup chopped nuts after the dry ingredients have been mixed.
