Quick Banana Bread


3/4 c. oil
1 3/4 c. sugar
5 ripe-smashed bananas
3 c. flour
1 tsp. salt & 2 tsp. soda in 1/2 c.
cold water
1 tsp. cinnamon
1 tsp. vanilla
1/2 c. chopped nuts (optional)


Mix all ingredients together well. Grease and sugar 2 loaf pans. (Use sugar as you would if flouring pan.) Add mixture, sprinkle a little sugar on top. Bake at 375 degrees for 45 minutes.
